Rolls and Barms

My wife and I were reminiscing about this and that when the disscussion turned to the difference in the rolls and barms you get now, as opposed to the ones you used to buy back in the sixties and seventies.Can anyone enlighten us on why the recipe was changed?

I'm sure there are plenty of you who can remember what a proper barm was like.

Hoynes,Joe Blacks,McArthurs and The Co-op all superior to what you get today.

Was the reason to change purely financial?

My favourite barms were Joe Black's. The were perfecty round, flat and almost an inch thick. They had a unique flavour of their own. They seemed to be made in layers. The barms nowadays seem to be more like rolls and have a drier texture.

His pies were among the best I've ever tasted, but he only made them on a Friday, and if I remember rightly, they were on sale from 10.00 am onwards. His wedding cakes were put on display in his window when he completed them, and they were works of art.

The supermarkets are to blame for the loss of a lot of local individuality in produce all over the country, butchers, bakers, fishmongers etc, as their approach is to capture the market with lower prices and mass production. Local shops which can actually provide in many cases a better product and more personal service, cannot compete on cost. Inevitably, towns like Campbeltown lose their local shops and many of their unique products.

I don't go back that far EMDEE, but I remember McIlchere's had the better rolls but MacArthurs bams were to die for.

As you say Emdee ,Joe Black's pies were delicious.When I was message boy in Renton's it was Black's that did our pies.I used to look forward to going over on my message bike to collect them,used to manage to eat two, or sometimes three, on a slow ride back to the shop.The sausage rolls were great too.

Mr.Black would always give me a poke filled with cut offs from the cakes.

I worked in McArthur's a few years later, and loved their small pork pies..remember them?

I hate barms.

The last time I had a roll was when I first hit the toon; and therefore, went to Mchilchere's (sic) and had an egg bacon roll, with a cup of coffee. Given that I haven't had ayreshire bacon in a bezillion years, of course, it was too saltly! BUT, I guzzled it up like the old ex-pat that I am and drank about six bottles of water to compensate!

Yee-Ha!!!!!!!!!!
